You have a choice of either a cast iron pan or a stainless steel pan. For a better heat retention capacity, for cooking a lot during the course of the day, the cast iron pot is the best choice. But if you want the pan to heat faster, then the stainless steel pan is the best choice, but it won’t provide the same good heat retention provided by the cast iron pan.
